Honduras Los Quetzales
The farm of Pedro Sagastume is named for the proud, iridescent birds that inhabit the forests of the Santa Bárbara region. The cup profile has a naturally buoyant sweetness derived from the fruit pectins and mucilage that remain on the coffee seed as it dries (aka the honey process). The Los Quetzales estate itself is nothing short of magical - located at the base of a national park where the tropical birds sing and monkeys follow you through the dense rows of ripe coffee trees.
